Heritage apple varieties, like Cox Pippins and Pink ladies are used to top of our housemade frangipane (made with organic Spanish almonds) in a cornmeal-rye-barley-kamut crust.

This rustic tart is simple to make. Cut the dough into a large circle, add the frangipane to the center. Layer the apples on the top. Flip over the edges 5, or 6 times leaving the filling exposed. After light brushing of egg, or yogurt, and a sprinkle of cane sugar to to the top, bake until golden. Here is a link to our pie dough recipe.
