This wholegrain sourdough is with rye and spelt. Contains organic Ontario seeds, rye and malted barley berries and sea salt. Bread with natural sourdough starter breaks down (or, pre-digests) the gluten naturally. 100% whole grain bread has a high hydration level and needs a slow fermentation process resulting in a full flavour that is not too sour.
